Six Tip-off’s for a Vegetarian on Thanksgiving!

How do you celebrate Thanksgiving without eating turkey?!

It’s simple. Come to realize…. there is so much more.

1. It’s not about the food … it’s about family. My daughter would always say… “Mom it’s not about the food it’s about fellowship”. Now does that mean I will eat turkey? No! But I will focus on having fun, laughing, and enjoying my family.

2. Bring a surprise dessert! I don’t know of anyone who does not love desserts! So why not whip up a good healthy raw vegan one like my “Raw Chocolate pudding” topped with shaved coconut or try my ” Pink Coconut Covered Cranberry Truffles”!  Yummy!

3. Bring the Greens.  No I’m not cooking turkey this year, (although I did that last year at our home for my son). Rather I will be taking a big green mouth-watering salad, a large colorful veggie tray and two dishes of sweet potatoes to our parent’s home. I‘ll add cranberries and walnuts to the salad for a festive look and the sweet potatoes… well I will make one dish WITH the traditional marshmallows and one without. That will put a smile on everyone’s face!

4. Leave the “Look” at home. You know the “look”. The disgusting one. The one that speaks a hundred words”. The one that judges and says… “Ewww… you are going to eat that!” But rather focus on the individual as a person instead of what they eat. Don’t leave a distaste in their mouth just because you don’t eat meat!

5. Give the gift of grace. What your family members or friends eat is actually none of your business!  You are responsible for you and you only. Period. Come to think of it – that is freeing. That is grace.

6. Be thankful. The most important reminder for this day is to relax and enjoy. To make a mental list of things we are thankful for. For me… I’m thankful for God’s provision in my life, my health, my home and most of all my family.

“Nutty Ginger Bites” – Satisfies any Sweet Tooth!

Oh these are the bomb and will satisfy any sweet tooth! I always make double batch… triple batch as they don’t last long around this home! Thanks to my daughter johnnabrynn.com for the mouth-watering photo!
“Nutty Ginger Bites”
- 1 cup raw pecans
- 1 cup raw almonds
- 1 1/2 cup medjool dates seeded
-
1/4 cup flax seeds
- pulse ingredients in a food processor

Add
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. cloves 

adjust flavors if needed
add a bit of agave nectar for a sweeter to taste if needed
Pulse a bit more! (Don’t over pulse or it will turn to a nut butter!)
form into bite size balls and chow down!
Oops forgot

Roll the balls into a mixture of….
1 cup grounded almonds
1/2 tsp cinnamon powder
1/4 ginger powder

NOW chow down!

I Can’t Believe it’s Tofu Pie!

A pie made with tofu?

YES
it can be done! 
I know, I know – sounds a bit strange but I thought I would give it a try – and boy was I surprised!

In most of my raw desserts I use a nut base, but today I wanted something different. So I thought why not try tofu! It’s not considered a raw ingredient but hey,  it worked! Tofu has a very mild taste, blends well with anything, and takes on the taste of whatever it’s mixed with. 

Whether firm or soft, tofu turned out to be the perfect main ingredient for my ”Tofu Creme” pie.
 

Tofu Creme Pie 
Crust
1 cup of raw almonds
1 cup of dates pitted

Blend in food processor until crumbly
Press mixture into spring form pan and freeze  
 
  
Filling
1.  1 block of tofu
2.  3/4 cup of almond butter
3.  3/4 cup of tahini
4.  1/2 cup of raw honey
5.  1 tsp of vanilla, almond, maple or even butterscotch flavoring!
6.  1/4 cup Coconut Oil

Mix steps 1-5 in high-powered blender until thick and creamy
Adjust ingredients to your liking 
Pour mixture into nut crust
Freeze until firm

Adding step #6… Coconut oil is optional and will give your pie an even firmer texture.

The pie is then topped with a “cashew whip”… which is created by soaking the raw cashews for one hour
then drain and blend in a high-speed blender with a bit of orange juice.
For a sweeter cashew whip you can add 1-2 soaked pitted dates or a squeeze of Agave nectar
