Lately I have been craving chocolate pudding!
Now I don’t know about you, but when the craving for chocolate comes upon me – watch out!
I scrambled through my recipes and found this post I did last year and thought I needed to remind myself once again that there is an alternative!
These three yummy chocolateeee alternative recipes - are all very different but yet actually good for you too!
1. Avocado base
2. Coconut base
3. Almond base
Now I am not saying I NEVER sink my teeth into a good piece of chocolate…. I do! But I am ALWAYS on the look out for healthy alternatives that satisfy the little girl in me – who some times gets so out of hand screaming for her chocolate!
Two great alternatives I have come across are “carob” and “cacao” powder.
You can find both at your local health food store or better yet… check out Natural Zing or “The Raw Food World” as they for sure have it!
So is your mouth-watering yet?
Well, let’s get to the recipes!
1. An “avocado” base pudding I found in Nomi Shannon’s cookbook “Raw Gourmet”!
Chocolate Pudding
2 Medium size ripe avocados
Agave nectar to taste (start with 1/4 – 1/2 cup, or used soaked dates, or maple syrup)
1 vanilla bean or 1 teaspoon vanilla extract
Pinch of sea salt
dash cayenne
1 teaspoon of dried or fresh orange zest
1-2 tablespoons raw cacao nibs (optional)
3-4 tablespoons raw cocao powder (or to taste)
Water-enough so blender will run smoothly, about 1/4 cup or a little more
Blend avocado and vanilla pod until smooth.
Add additional ingredients with enough water, blend until smooth
Adjust chocolate and agave to taste.
Put in small ramekins
Cover and refrigerate for several hours to allow flavors to blend.
2. A “coconut base” that you can find in “Raw Food Real World” by Matthew Kenney and Sarma Melngailis
Chocolate Pudding
2 C. “young” coconut meat
¾ C. coconut water, at room temperature (or more, if needed to thin)
½ C. maple syrup (organic, grade B)
1/3 C. agave nectar
½ C. cocoa powder
2 Tbls. Vanilla extract
¼ tsp. sea salt (opt)
In high-speed blender, puree all ingredients until smooth
Incredibly delicious
If you never have cracked open a coconut you might want to read “Stinky Armpits and Crackin Coconuts”!
3. Lastly… we can’t forget my “almond” base luscious “Cacao Almond Pudding”
I hope you enjoyed these recipes just as much as I do….off to the fridge for another spoonful of pudding to satisfy that little girl within!
